Superstorms. Wildfires. Extreme droughts. It’s impossible to read the news without hearing about yet another climate disaster; it’s equally hard to figure out what you can do about it if you’re not necessarily eager to give up, say, driving, or burgers.
The good news is that you don’t have to become a vegan tomorrow to do better by the planet. If you care about the impact your food choices have on the earth, chances are you’re already making choices that are shrinking your climate footprint. You might not give up In-N-Out altogether, but maybe you’re ordering fewer Double-Doubles. Maybe you top your morning oats with locally grown apples instead of berries jetted in from South America. Maybe, like more and more Bon Appétit readers these days, you’re trying to up the number of nights you go meatless and dig into a spicy mushroom larb or a warming dal with fluffy rice.
Of course, we can’t actually save the planet via our personal choices alone, even if we all gave up red meat forever. But all the little decisions can at least begin to move the needle in the right direction (and relieve some of our collective agita!), and that’s where this guide comes in. Make this the year you go deep on lentils. Try composting for a week. Actually figure out how to stop tossing your wilty greens. When you start with one small goal that doesn’t feel like a huge shake-up of your existing routine, you may just find this whole saving-the-planet thing isn’t so hard after all.
